Sumitsukare

Ingredients (for 4 people)
- Daikon: 1 to 1.5 pieces
- Carrots: 1 (small)
- Abura-age (fried tofu): 1 slice
- Dashi-jiru (fish fumet): 1 cup
- Salmon head: 1 piece
- Soybeans: 1 cup
- Sake-kasu (sake lees): 1/4 of a bag
Preparation
A daikon grater

- Grate the daikon and carots and cut short slices of abura-age. Use a daikon grater (oroshi ‰º‚낵) tool to grate the daikon so it's not too soft.
- In a pot, put the previous with the pealed and parched soybeans as well as the salmon head (flesh and bones) that have been chopped up to make it easier to eat
- Then crumble in the sake lees, dashi-jiru, and soy sauce
- Mix well
- Simmer until the flavor works through.
- Serve in a bowl like the photo above and enjoy!
